Fast and Easy Bite size Zucchini Boats

Ingredients

  • 1 Large Zucchini
  • 1 Tbsp Avocado Oil
  • 1 Tsp Cayenne Pepper
  • 1 Tsp Garlic
  • To Taste sea salt or ¾ tsp table salt
  • To Taste sea salt or ¾ tsp table salt
  • 1/2 Cup Cheddar Cheese Shredded
  • 3 Slices Bacon Pre cooked and Crumbled
  • 3 Tbsp Sour Cream
  • 2 Tbsp Green Chile Diced

Instructions

  1. Preheat oven to 400F

  2. Cut Zucchini in Half

  3. Cut into 6 pieces and Scoop out centers

  4. Drizzle Oil and Sprinkle Cayenne Pepper, Garlic, Salt, and Pepper

  5. Put in Oven for 6-10 mins to soften and Partially cook zucchini

  6. Add Pre Cooked Bacon Crumbles and Cheddar Cheese 

  7. Put back in oven for 10 mins to melt Cheese

  8. Top with Sour Cream and Green Chile
