Keto Cauliflower Mash

  • Sauce Pan

Ingredients
 

  • 2 lbs cauliflower florets (aprox. 1 Large Cauliflower Head cut into florets)
  • 3 tbsp butter
  • 3 tbsp sour cream
  • 6 cloves garlic
  • 1/4 cup parmesan cheese
  • Salt and black pepper to taste
  • 1/2 tbsp Butter (Optional Topping)
  • 1 tsp Chives (Optional Topping)

Instructions
 

  • Cut cauliflower into florets
  • Boil cauliflower in a pot with salted water for 10 minutes or until tender.
  • Remove the cauliflower from the pot and set aside. Cover the cauliflower keep warm.
  • Drain the pot, heat the butter over medium high heat. Saute the garlic for about 1 minute.
  • Blend cauliflower and garlic in a food processor on high setting until smooth.
  • Put the mixture back into the pot and stir in the Parmesan cheese, sour cream and season with salt and pepper.
  • Top with your favorite topping
