So lets talk cake… Keto Cake Recipe… and why make a keto cake…

Well I do not suggest eating this regularly there are times when having this recipe in your arsenal can be very helpful. I have made this a few time and finding my self loving every bite. Even though while eating very low carbs it is very hard to make great tasting cake…

It is still possible to get a great tasting cake that does not have overwhelming egg taste.

This is a Recipe for someone following a Keto Diet

While this recipe is low in carbs I do not recommend this to someone not following a Keto Diet (Very Low Carb).

A Surprising and Delightful Treat! This Low Carb Cake is perfect for any Keto Party

Ingredients

  • 1 cup Erythritol
  • 3/4 cup Butter softened
  • 8 Eggs Large
  • 1/2 cup Unsweetened Almond milk
  • 1 tbsp Vanilla Extract
  • 3 cup Almond Flour Super Fine
  • 1/2 cup Coconut Flour
  • 1 1/2 tbsp Baking Powder

Frosting

  • 24 oz Cream Cheese softened
  • 1/2 cup Butter softened
  • 3/4 cup Erythritol Powdered
  • 1 tsp Vanilla Extract

Instructions

  • Preheat Oven 350f

Frosting

  •  Combine Ingredients and Mix

Cake

  • Mix the Butter and Erythritol until combined
  • Mix in Eggs 1 @ A Time
  • Add Unsweetened Almond Milk and Vanilla Extract
  • Mix
  • Add Almond Flour, Coconut Flour and Baking Powder
  • Mix
  • Fill a well oiled 8" springform pan
  • Bake for 40-50 mins, Top will be golden brown and feel spongy

Decorate

  • Whole other recipe 🙂 Have fun!

    I made this for a trial run before my birthday (Keto Chick here) and subbed banana extract for the vanilla and it turned out sublime!!! I was completely [pleasantly] surprised by how truly “cake-like” this was (especially the texture!). I will say that in my over it needs nearly an hour for a done center. In addition, it was troublesome to get out of the springring without the entire cake wanting to as well. Needs to be completely cool before taking out an sprayed liberally, all sides and bottom of springring pan. I’ll use an rubber spatula to help separate cake from pan when the big day comes to try to evacuate it in one piece.

      I am glad you liked it! Cake is a tough one to get the right texture… but this is one I really enjoyed making over and over until I got it taste the way I liked 🙂
      Fyi I have recently learned Butter is much better then spray for releasing the cake… rub your spring forms sides and bottom generously.
      Happy Birthday! My present to you is this… take a handful of unsweetened coconut, chop it up pretty fine then toss in a sandwich bag with a drop or two of your favorite food coloring and Shake… TADA! Keto Sprinkles!!

        Super-clever re: Keto sprinkles! lol

        I made the cake again [for my bday] and followed my instincts [with more oven time] and used avocado spray and voila! Absolutely no problems (and about a T and a 1/4 of the banana extract). I was so pleased. In fact, I was even more pleased that non-Keto peeps couldn’t figure out it was low carb!!! haha. VERY filling cake. I want to have a double slice but can never get through it.
